ABOUT THE AUTHOR: Staci Holweger is a former cheese addict who once muttered the words, "I would never be a vegan." A former middle school teacher, she retired to start her family over 16 years ago. With a natural instinct and passion for educating and helping others improve their lives, she became an entrepreneur and leadership coach. Traveling the world, she fell in love with the cuisine and began experimenting with how food and diet affect mental health, energy, wellness, and our everyday lives. She is now a holistic health practitioner and is pursuing her Ph.D. in Interactive Medicine.
