These are the recipes I created and when I had a carob bar company called NaamNom. In the book I offer ideas for substitutions and suggest ways to experiment with the recipes as well, should you be allergic or averse to any of the ingredients here... or if you are just exploratory! The ingredients are shared in grams.

NOTE: If you are looking for a substitute for chocolate... this may or may not work for you. When I made these bars, many could not tell the difference and were delighted. And some could and were less delighted. There is only one way to find out.
